I make a save in the game, but whenever I shut the game down and start up again I get the "Creating save date". My saved game is gone, and I have to start from scratch. I don't seem to have this issue with any other games. Under C:\user\(me)\documents\saved games I have my other game folders, but there isn't any Dragon Quest folder. So i managed to fix my problem by deleting my save file (I guess it was corrupt). You can get there by going to This PC/Documents/My Games/ Dragon Quest XI/Saved/Savegames when you ge there delete the saves in the folder folder. A table could be quite useful for maybe reducing the grind a bit though this is the first PC release for a mainline Dragon Quest game so I haven't really experienced the series since the really old installments over on the NES, probably changed quite a bit since the old drag the princess back to the kingdom she ran away from formula hah.
I'm having a similar issue, i got about 6 hours into the game, saved and then exited the game. When i opened the game again it only had my save from 3 hours into the game, same with my autosave file, it just completely ignored all the last 3 hours that i played while i was saving at every church.
